Ingredients:
- 4 different vegetables (measure amount dependant on how many balls you want to make)
- 3-4 Tomatoes
- 1 onion
- 2 garlic cloves (chopped)
- salt and pepper
- 2tbsp dried oregano
- 2 tsp fresh parsley (chopped)
- 1 green pepper (chopped)
- 1 red onion (chopped)
- Cornflour
Method:
- Heat oil and add green onion, red onion, salt, pepper and garlic. Keep cooking until onions are translucent.
- In a pot, chop and cook tomatoes, add one chopped onion, 1 crushed garlic clove in a pan with a little oil, add oregano to season.
- Cook your chosen veg on low heat until softened, add cornflour and use your hands to shape into balls.
- Add veggie balls into the sauce
- Roast the sauce in a 375’F oven for 1 hour and stir
- Serve with rice or spaghetti
