Ingredients:

  • Cubed chicken breast (1 breast)
  • One small onion
  • Once garlic glove
  • Ginger
  • One tomato
  • Cumin seeds
  • Turmeric/chili (optional)
  • Fresh apricot
  • Vegetable oil

Method:

  1. Fry onion until soft then add the garlic, ginger, cumin, and tomato and cook together until it forms a soft, lumpy paste. This will be the base for the curry.
  2. Add the washed and drained chicken breast and let simmer (best with a lid)
  3. Once the chicken is nearly cooked (10 mins before finished) add the chopped apricot
  4. (add a little bit of hot water if the sauce is too thick)
  5. Served best with naan bread or steamed rice

Aunty's Tips!

You can add yoghurt or fresh cream to the sauce to make it even more saucy!

fresh salad and warm bread goes well with this dish!

Don’t be afraid to experiment with different veg in the curry, I like to add spinach!
