Veggieballs ragu

Vegetable ragu


  • 4 different vegetables (measure amount dependant on how many balls you want to make)
  • 3-4 Tomatoes
  • 1 onion
  • 2 garlic cloves (chopped)
  • salt and pepper
  • 2tbsp dried oregano
  • 2 tsp fresh parsley (chopped)
  • 1 green pepper (chopped)
  • 1 red onion (chopped)
  • Cornflour


  1. Heat oil and add green onion, red onion, salt, pepper and garlic. Keep cooking until onions are translucent.
  2. In a pot,  chop and cook tomatoes, add one chopped onion, 1 crushed garlic clove in a pan with a little oil, add oregano to season.
  3. Cook your chosen veg on low heat until softened, add cornflour and use your hands to shape into balls.
  4. Add veggie balls into the sauce
  5. Roast the sauce in a 375'F oven for 1 hour and stir
  6. Serve with rice or spaghetti
