Potato and leak bolani


  • 3 cups of plain flour
  • water (as needed)
  • 1tsp salt
  • 2tbsp oil (plus more for flatbread)
  • 4 medium potatoes
  • 4 spring onions or chives (finely chopped)
  • Half a cup of finely chopped coriander
  • Salt and black pepper (to taste)


  1. Add salt and oil to flour and mix until a soft dough is made Kneed for 5-7 minutes and cover to let it rest for 30 minutes.
  2. Boil potatoes and mash up
  3. Mix onions, coriander, salt and pepper into the mash
  4. Divide the dough into 8 pieces
  5. Spread filling onto half of the dough then fold over and press down at the sides to seal
  6. heat a pan on medium heat, ad a tbsp oil to the pan and cook the flatbread on both sides until golden brown

Aunty's Tips!

You can use pre-prepared wraps!


Test out different fillings, it's fun to try mixing in minced chicken on lamb!


Instead of folding, you can put the filling between two wraps, cook in the frying pan and add butter on top whilst cooking gently
