Cheesy vegetable lasagne

Cheesy veg lasagne


  • 2 medium carrots
  • 1 medium bell pepper (red or green)
  • 2 cups fresh baby spinach
  • 1 zucchini
  • 1 medium onion
  • 2 cups cottage cheese
  • 8 ounces mozzarella cheese
  • cheddar cheese
  • 1 teaspoon salt
  • 8 ounces lasagne noodles (dry)
  • plain flour
  • milk
  • butter



  1. Preheat the oven 350'F
  2. Chop 5/6 tomatoes, onion and a garlic clove and mix to make tomato sauce
  3. Dice carrots, green pepper, onion and zucchini. Spray a skillet with with cooking spray and set heat to medium
  4. Sauté vegetables until they are tender
  5. Add spinach and continue to sauté until the spinach is wilted, add home made tomato sauce
  6. Make the filling
  7. Make the home-made cheese sauce: plain flour, cheese, milk and butter
  8. In a baking tray, layer pasta sheet, filling, sauce. Repeat this twice and sprinkle grated cheese on top.
  9. Cover with foil and bake for 50 minutes. Remove the foil for the last 10 minutes.
