Cheesy vegetable lasagne
Ingredients:
- 2 medium carrots
- 1 medium bell pepper (red or green)
- 2 cups fresh baby spinach
- 1 zucchini
- 1 medium onion
- 2 cups cottage cheese
- 8 ounces mozzarella cheese
- cheddar cheese
- 1 teaspoon salt
- 8 ounces lasagne noodles (dry)
- plain flour
- milk
- butter
Method:
- Preheat the oven 350'F
- Chop 5/6 tomatoes, onion and a garlic clove and mix to make tomato sauce
- Dice carrots, green pepper, onion and zucchini. Spray a skillet with with cooking spray and set heat to medium
- Sauté vegetables until they are tender
- Add spinach and continue to sauté until the spinach is wilted, add home made tomato sauce
- Make the filling
- Make the home-made cheese sauce: plain flour, cheese, milk and butter
- In a baking tray, layer pasta sheet, filling, sauce. Repeat this twice and sprinkle grated cheese on top.
- Cover with foil and bake for 50 minutes. Remove the foil for the last 10 minutes.
